Since moving up to Port Douglas in 2020, Alison and Tim have established themselves in the community. For this committed couple, the local and sustainable production of high-quality, hand-made foods has been a passion for many years. They started their smokehouse in 2020 and began selling a range of smoked meats, cheeses and other delicious products throughout the region. For many locals and return travellers alike, Tim will have become a familiar face at the Port Douglas and Mossman markets.

 

Alison and Tim are now welcoming customers new and old into the new, fresh space on Grant Street. It’s replete with their established range of locally smoked goods, imported cheeses, platters made to order and all the trimmings and particularities one should expect from a modern delicatessen.

A touch of the Mediterranean comes to Port, built on the firm foundations of locally sourced produce and lovingly hand-made goods.

Our Products

The heart and soul of our business are our locally smoked, 100% Australian sourced meat products – our charcuterie-style, cured sausages, seafood and poultry. We’ve been smoking meats for over 24 years, it’s where our passion lies. Our range also includes our hand-made dips and grilled and marinated vegetables.

 

With the opening of the Port Douglas Deli & Smokehouse, we’re adding what we hope will become the greatest range of Australian and imported cheeses in the whole of Far North Queensland. If you love cheese as much as we do, go no further, you’ve arrived.

 

All this comes together with our lavishly produced and delicious platters. They’re so versatile – perfect for in-room dining, a picnic in the park or on the beach.

Ethical and environmental sustainability are at the core of our business. For us and our products, it begins with where it’s sourced and how it is made. We believe that local production is a key part of sustainability – it reduces food miles and energy costs, emphasises natural production methods and we employ local people. We are constantly looking at ways to reduce waste and to use recycled and recyclable materials in all aspects of our business.

 

Our free-range meats are all sourced from within Australia before preparation and curing in our local smokehouse. Our meat products are cured and preserved naturally including:

  • Nitrate-free bacon
  • sustainably sourced trout
  • Locally sourced seafood

The Process of Smoked Meat

Our range of hand-made sausages and other naturally cured meats have all been locally prepared and cured — be they air-dried or smoked in our smokehouse. We first started smoking meats in 1998. It’s something we’re very passionate about. Over the years we have developed and finely tuned our smoking and curing techniques, emphasising traditionally-based processes.

. Our range of meats includes smoked trout, salmon and poultry, some beautifully mild Italian-style chorizos and a French-style saucisson. We also smoke and cure Halloumi, pear and almonds., We grill and marinate a range of vegetables, such as peppers and zucchini.


Our methods of curing emphasize attention to detail and a gentle, hands-on approach. Products are rested afterwards and the whole process takes time (it can be weeks or months). Be assured that the products that come to you have been lovingly and carefully making. You’ll see it and taste it.

At the Port Douglas Deli & Smokehouse it’s about the platters that matter. And ours are top-notch. We started trialling platters in 2021 and they’ve been a great hit – with locals and visitors to Port Douglas and surrounds.

We have a range of platters on offer, each including selected meats, cheeses, dips and antipasto.

Cheeses



We aim to showcase local and regional specialties from across the world. It’s all about variety, taste and the trying of something new – perfect for fine dining!

Olives and Antipasto


 

Our range of antipasti starts with olives. We prepare our olives using an in-house, Greek-style marinade. The use of oregano, garlic and lemon gives our olives a ‘Mediterranean’ feel – clean and firm in texture, full, fresh and zesty in flavour.

we include our grilled and pickled vegetables – eggplant, red capsicum and zucchini – as well as other delights, such as stuffed peppers, sun-dried tomatoes, bocconcini and artichokes, pickled onions and marinated octopus.

 

Dips



We make a range of cool, delicious dips using a range of our own locally smoked products and other specialty ingredients including a range of seafood-based dips.

Delicatessen



We stock a diversity of goods in our delicatessen lines, including specialty brands and products that you won’t easily find elsewhere. Our shelves are full of things that go together and compliment our other lines of smoked meats, charcuterie and fine cheeses.
